Flaky Crust: Keep It Cold
The secret to a good crust is cold butter and water. This helps make those flaky layers. Don’t mix the dough too much!
The Filling: Pick a Mix of Apples
Use different apples for flavor and texture:
- Granny Smith: Tart and holds its shape.
- Honeycrisp or Fuji: Sweet and soft.
Cinnamon and nutmeg are a must, but try a little allspice too. Cover the bottom crust with crushed cornflakes before adding the filling to keep the bottom from getting soggy.
How to Get That Perfect Slice:
Let the pie cool completely (3-4 hours) before cutting it. The filling needs time to set.

What You Need:
- Crust: 2.5 cups flour, 1 tsp salt, 1 cup cold butter, 1/2 cup ice water
- Filling: 6-8 apples, peeled and sliced
- 3/4 cup sugar, 2 tbsp flour, 1 tsp cinnamon, 1/4 tsp nutmeg, 1 tbsp lemon juice
- 1 egg, beaten (for egg wash)
How to Make It:
- Crust: Make the dough, divide it in half, and keep it in the fridge for 1 hour.
- Filling: Mix apples with sugar, flour, spices, and lemon juice.
- Put It Together: Roll out one piece of dough for the bottom crust. Sprinkle with crushed crackers. Pour in the apple filling. Roll out the second piece for the top. Crimp the edges.
- Bake: Brush the top with egg wash. Bake at 425°F (220°C) for 15 minutes, then turn the heat down to 375°F (190°C) and bake for 50-60 minutes.
- Cool: Let the pie cool for 3-4 hours before cutting.
