What You Need:
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1.5 lbs ground beef
- 1/2 cup milk
- 1/2 cup panko breadcrumbs
- 1 egg, beaten
- 1 tbsp Worcestershire sauce
- 1 tsp thyme, 1 tsp salt, 1/2 tsp pepper
- Glaze: 1/2 cup ketchup, 2 tbsp brown sugar, 1 tbsp apple cider vinegar
How to Make It:
- Prep: Cook onion and garlic in olive oil until soft. Mix milk and breadcrumbs and let it sit for 5 minutes.
- Mix: Add the ground beef, veggies, egg, Worcestershire sauce, and seasonings to the breadcrumbs. Mix gently.
- Shape and Glaze: Shape the mixture into a loaf and put it in a pan. Mix the glaze ingredients and put half of it on the loaf.
- Bake: Bake at 350°F (175°C) for 1 hour. Put the rest of the glaze on top and bake for another 10-15 minutes. The inside needs to be 160°F (71°C).
- Rest: Let it sit for 10 minutes before cutting.
What to Do With Leftovers:
Meatloaf sandwiches are the best. Put cold meatloaf on toasted bread with mayo, lettuce, and tomato. You can also make Meatloaf Hash with potatoes, onions, and a fried egg.
